Wholesome Black Bean Halloween Dip with Bat Chips

A quick and easy Halloween snack that’s wholesome, delicious, and perfect for parties. This smoky black bean dip with baked bat-shaped tortilla chips comes together in 15 minutes and is a crowd-pleaser for kids and adults alike.

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 medium red bell pepper, finely diced
  • ½ cup red onion, finely diced
  • ½ cup fresh cilantro, chopped
  • 3 tablespoons lime juice (from 2 limes)
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt, or to taste
  • 2 tablespoons olive oil
  • 4 large (8-inch) flour tortillas
  • Avocado oil spray (for the chips)
  • Optional toppings: sliced jalapeño, diced avocado, Greek yogurt or sour cream, extra cilantro

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly spray with avocado oil.
  2. Make the bat chips: Stack the flour tortillas on a cutting board. Use a bat-shaped cookie cutter (about 3 inches wide) to press through all four tortillas at once, getting 3-4 bats per tortilla. Save the scraps for another use.
  3. Place the bat shapes on the prepared baking sheet in a single layer. Brush the tops lightly with avocado oil and sprinkle with a tiny pinch of salt. Bake for 8-10 minutes, until the edges are golden and crisp. Watch closely after 7 minutes to prevent burning. Let cool on the sheet.
  4. Start the dip: In a large mixing bowl, add the drained and rinsed black beans. Use a potato masher or fork to mash them to your desired consistency—leave about half the beans whole for texture.
  5. Add the thawed corn, diced red bell pepper, and diced red onion. Stir to combine.
  6. Add the chopped cilantro, lime juice, ground cumin, smoked paprika, garlic powder, salt, and olive oil. Stir until the spices are fully incorporated. Taste and adjust seasoning with more salt or lime juice if needed.
  7. Cover the bowl with plastic wrap or a clean kitchen towel and let it rest at room temperature for 10 minutes to allow flavors to meld. (Can be refrigerated for up to 24 hours; bring to room temperature before serving.)
  8. Transfer the dip to a serving bowl. Arrange the bat chips around the bowl, sticking them into the dip. Add optional toppings if desired. Serve immediately.

Notes

For best flavor, let the dip rest at room temperature for 10 minutes before serving. The dip tastes even better the next day. Make extra bat chips as they tend to disappear quickly. Handle baked chips gently as they are delicate. If you don’t have a bat cookie cutter, use any Halloween shape or cut tortillas into triangles.
