  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

  • Optional mix-ins: 1/2 cup chopped pecans or walnuts, 1/3 cup chocolate chips, 1/4 cup dried cranberries, or 2 tablespoons chia seeds

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin pan with liners or grease well.
  2. In a large bowl, whisk together the wet ingredients: pumpkin purée, eggs, maple syrup, milk, melted coconut oil or butter, and vanilla extract until smooth.
