  • 4 oz soppressata, sliced
  • 1 cup dried figs or dates, halved
  • 1 cup red grapes, washed and stemmed
  • 1/2 cup candied pecans
  • 1/4 cup fig jam or honey
  • 1 box water crackers or rosemary crackers
  • 1 baguette, sliced and lightly toasted
  • 1/2 cup pita chips or pretzel sticks
  • Fresh rosemary sprigs (for garnish)
  • Fresh thyme leaves (optional)
  • 1 apple or pear, thinly sliced
  • Olives (green or kalamata, optional)
  • Cornichons or pickled onions (optional)
  • Dark chocolate squares (optional)

Instructions

  1. Set up your board. Place small bowls for jam, honey, and olives on the board first in a triangle pattern.
  2. Add the cheese. Place the brie whole in the center. Arrange sliced cheddar in a fan shape to one side, and crumble blue cheese on the opposite side.
  3. Layer the meats. Fold prosciutto into loose ribbons near the brie. Stack salami rounds in a pile or fan them out. Place soppressata slices in a separate pile.
  4. Add the seasonal accents. Scatter dried figs and grapes in clusters. Sprinkle candied pecans in gaps. Drizzle fig jam over brie or place in a bowl. Place honey in a separate bowl.
  5. Fill in with crackers and bread. Arrange water crackers in a single layer along one edge. Place toasted baguette slices in a stack or fan. Add pita chips or pretzel sticks in another corner.
  6. Add fresh elements. Slice apple or pear right before serving and arrange in a small fan. Tuck fresh rosemary sprigs and thyme leaves into gaps.
  7. Final touches. Check for empty spots and fill with extra crackers or nuts. Serve immediately, or cover with plastic wrap and refrigerate for up to 2 hours. Take out 30 minutes before serving.
