  • 1 cup unsalted butter (2 sticks)
  • ¼ cup fresh sage leaves, finely chopped, plus whole leaves for garnish
  • 1 large yellow onion, diced
  • 3 ribs celery, diced
  • 4 cloves garlic, minced
  • 2½ cups chicken or vegetable broth, warmed
  • 2 large eggs
  • ¼ cup fresh parsley, chopped
  • 1½ teaspoons salt (or to taste)
  • 1 teaspoon freshly ground black pepper
  • Optional: ½ pound cooked Italian sausage, crumbled; ½ cup dried cranberries; 1 cup chopped mushrooms, sautéed; ½ cup toasted pecans

Instructions

  1. Prepare the bread: Cut bread into ½-inch cubes. Spread on a large baking sheet in a single layer. If using fresh bread, toast in a 300°F oven for 15-20 minutes, stirring halfway, until dry but not browned. (Can be done up to 3 days ahead; store in airtight container at room temperature.)
  2. Brown the butter: In a large skillet or saucepan, melt butter over medium heat. Swirl occasionally. After 5-7 minutes, butter will turn deep golden brown and smell nutty. Remove from heat immediately and pour into a heat-safe bowl. Set aside 2 tablespoons for brushing on top later.
  3. Sauté the aromatics: In the same skillet, add remaining browned butter and heat over medium. Add onion and celery; cook 6-8 minutes until soft and translucent. Add garlic and cook 1 minute more. Remove from heat and let cool slightly.
  4. Combine wet ingredients: In a small bowl, whisk together warm broth, eggs, chopped sage, parsley, salt, and pepper until eggs are fully incorporated.
  5. Assemble the stuffing: Place dried bread cubes in a large mixing bowl. Pour sautéed vegetables over bread and toss gently. Pour broth mixture over bread a little at a time, tossing gently after each addition. Bread should be moist but not swimming. Let mixture rest for 10 minutes to absorb liquid.
  6. Fill the muffin tin: Preheat oven to 375°F. Generously grease a 12-cup muffin tin with butter or non-stick spray. Divide stuffing mixture evenly among cups, pressing down gently to pack. Mound slightly above the rim.
  7. Bake: Bake for 25-30 minutes until tops are golden brown and crispy. About 5 minutes before done, brush reserved brown butter over tops and place a fresh sage leaf on each muffin for garnish.

Notes

For extra-crispy edges, brush muffin tin with extra brown butter before filling. Let mixture rest 10 minutes after adding broth for better texture. Muffins taste even better the next day. To reheat, use 350°F oven for 10-12 minutes (not microwave).
