These Spooky Mummy Meatball Skewers are a fun and easy Halloween snack made with frozen meatballs, string cheese, and spaghetti. Ready in 25 minutes, they’re a crowd-pleaser that looks spooky but isn’t scary for picky eaters.

Ingredients

Scale
  • 1 bag (about 2430) frozen fully cooked meatballs
  • 1/2 cup marinara or BBQ sauce
  • 68 sticks string cheese
  • 1/2 cup cooked spaghetti or angel hair pasta
  • Sriracha or ketchup (for eyes)
  • Small pretzel sticks (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cook your meatballs: If using frozen, microwave for 2-3 minutes until heated through but not piping hot. Let rest for 5 minutes on a paper towel to absorb excess moisture.
  3. Prepare the cheese strips: Peel each string cheese stick into thin strips lengthwise (about 6-8 strips per stick).
  4. Wrap the meatballs: Take one cheese strip and wrap it around a meatball, leaving a small gap for the eyes. Overlap strips slightly. Use 2-3 strips per meatball.
  5. Add the spaghetti: Tuck a small piece of cooked spaghetti (about 2 inches long) under a cheese strip to look like a loose bandage.
  6. Add the eyes: Use a toothpick to dab a tiny dot of sriracha or ketchup where the eyes should go.
  7. Skewer them: Thread 3-4 mummy meatballs onto each skewer, leaving space between each.
  8. Bake for 5-7 minutes until cheese is slightly melted but still holding its shape.
  9. Let them rest for 2 minutes to set the cheese.
  10. Serve immediately with marinara or BBQ sauce for dipping.

Notes

Don’t over-melt the cheese; 5 minutes at 375°F is usually perfect. Use cold cheese for easier peeling. Work in batches to prevent cheese from warming up. For make-ahead, assemble up to 2 hours ahead and refrigerate, adding 2-3 minutes to baking time. For gluten-free version, use gluten-free pasta and check meatball labels. Air fryer version: cook at 375°F for 3-4 minutes.
