  • 1 store-bought or homemade 9-inch pie crust (flaky butter crust recommended)
  • 45 medium heirloom tomatoes, sliced (red, yellow, or mixed)
  • 1 ½ cups shredded Gruyère cheese
  • ¼ cup fresh basil leaves, roughly chopped
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • ½ small red onion, finely diced
  • ¼ cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Fit the pie crust into a 9-inch pie dish, crimp edges, and prick the bottom with a fork. Chill in the fridge while preparing filling.
  3. Wash and pat dry heirloom tomatoes. Slice about ¼ inch thick. Lay slices on paper towels, sprinkle lightly with salt, and let sit for 10-15 minutes to draw out moisture.
  4. In a medium bowl, combine mayonnaise, Dijon mustard, minced garlic, diced onion, chopped basil, and half of the shredded Gruyère cheese. Season with pepper and additional salt if needed.
  5. Remove paper towels from tomato slices and gently pat dry. Arrange a layer of tomatoes on the pie crust, slightly overlapping.
  6. Spread a portion of the mayo-cheese mixture evenly over the tomatoes. Repeat layering until all ingredients are used, finishing with remaining Gruyère and Parmesan cheeses on top.
  7. Drizzle olive oil over the top layer.
  8. Bake for 35-40 minutes until crust is golden and cheese is bubbly and browned. Check after 30 minutes and cover edges with foil if browning too fast.
  9. Cool for 10-15 minutes before slicing to allow filling to set.

Notes

Salting and draining the tomatoes is essential to prevent a soggy crust. Use ripe but firm heirloom tomatoes for best texture and flavor. Drizzling olive oil on top before baking enhances browning and richness. If edges brown too quickly, cover with foil. For gluten-free, use almond flour crust or a crustless version. Substitute Gruyère with fontina or Swiss cheese if needed.
