A quick and easy sandwich combining flaky croissants, savory roasted turkey, creamy brie, and sweet-tart raspberry jam, perfect for busy lunches and lunchboxes.

Ingredients

  • Flaky croissants (fresh or day-old, large size preferred)
  • Roasted turkey slices (thinly sliced, deli-style turkey breast or homemade leftovers)
  • Brie cheese (soft, creamy with rind left on, small wheel or wedge form)
  • Raspberry jam (tart and sweet, homemade or high-quality store brand like Bonne Maman)
  • Baby spinach or arugula (optional, for fresh peppery crunch)
  • Unsalted butter (softened, for lightly toasting croissants if desired)
  • Freshly cracked black pepper (a pinch to season turkey and cheese)
  • Optional Dijon or whole grain mustard (for extra zing)

Instructions

  1. Slice the croissants horizontally without cutting all the way through to keep a hinge.
  2. Thinly slice the brie if not pre-sliced and prepare roasted turkey breast slices about 1/8 inch thick.
  3. Spread a thin layer of raspberry jam on the bottom half of each croissant using a butter knife or small spreader.
  4. Layer 3 to 4 slices of roasted turkey evenly over the jam, then add 2-3 slices of brie on top.
  5. Optionally add a small handful of baby spinach or arugula over the brie and sprinkle with freshly cracked black pepper. Smear Dijon mustard on the top half of the croissant if desired.
  6. Close the croissant carefully. Heat a skillet over medium-low heat and add a little butter. Place the sandwich in the skillet, pressing gently with a spatula, and toast each side for 2-3 minutes until golden and the brie softens.
  7. Wrap in parchment or beeswax wrap and place in a lunchbox if making ahead. Keep fresh for a few hours without refrigeration or use an ice pack for longer storage.
  8. Serve with extra raspberry jam on the side for dipping if desired.

Notes

Let brie sit out a few minutes before assembling to soften for better melting. Avoid overfilling the croissant to prevent tearing. Toast on medium-low heat to warm through without burning. For dairy-free or gluten-free versions, swap ingredients accordingly. Jam can be swapped with fig, apricot, or strawberry preserves. Mustard is optional for extra flavor.
