Ingredients

Scale
  • 1 cup raw almonds
  • 1 cup raw cashews
  • 1/2 cup shelled pistachios
  • 2 tablespoons local honey (for coating nuts)
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon cinnamon (optional)
  • 4 ounces brie cheese
  • 1/2 cup dried figs
  • 1/2 cup dried cranberries
  • 1 apple or pear, sliced
  • 1 cup crackers or crostini
  • 2 tablespoons honey (for drizzling)
  • Fresh rosemary sprigs
  • Edible flowers (optional)
  • Flaky sea salt (for finishing)

Instructions

  1. Toast the nuts: Heat olive oil in a small skillet over medium heat. Add almonds, cashews, and pistachios. Stir frequently for 3-4 minutes until fragrant and lightly golden.
  2. Honey coat the nuts: Reduce heat to low. Drizzle 2 tablespoons honey over warm nuts. Add cinnamon and sea salt. Stir constantly for 1-2 minutes until evenly coated. Remove from heat and let cool slightly on a plate.
  3. Prepare the board: Place a large wooden board or platter on a flat surface. Position a small bowl of extra honey in the center. Place brie wedge next to the honey bowl. Fan out sliced apple or pear on one side.
  4. Arrange the dried fruit: Scatter dried figs and dried cranberries in small clusters around the board.
  5. Add the honey nuts: Once nuts have cooled, pile them in a generous mound near the center of the board, letting a few tumble out naturally.
  6. Place the crackers: Arrange crackers or crostini in a fan pattern along one edge of the board, overlapping slightly.
  7. Drizzle and garnish: Drizzle remaining 2 tablespoons honey over brie and nuts. Sprinkle flaky sea salt over the entire board. Tuck fresh rosemary sprigs and edible flowers between ingredients.
  8. Serve immediately: Place board in the center of the table. Provide small plates, napkins, and a cheese knife. Encourage eating directly from the board.

Notes

Let brie come to room temperature for 30 minutes before serving. Toast nuts carefully to avoid burning. Use two types of honey for complexity if available. Prep all ingredients before arranging to avoid last-minute scrambling.
