  • 4 tablespoons unsalted butter, softened
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup marshmallow creme (about half a jar)
  • 1/2 cup mini marshmallows (optional, for topping)

Instructions

  1. Cook the sweet potatoes: Wash and pierce them several times with a fork. Place in a large microwave-safe bowl and microwave on high for 5 minutes. Flip, then microwave for another 3-5 minutes until fork-tender. Let cool for 2 minutes.
  2. Mash the potatoes: Peel the skins off and place the flesh back in the bowl. Add butter, brown sugar, cinnamon, nutmeg, salt, and vanilla extract. Mash until smooth (a few lumps are fine).
  3. Preheat the broiler to high, with an oven rack about 6 inches from the heating element.
  4. Assemble the casserole: Spread the mashed sweet potato mixture evenly into an 8×8 or 9×9 baking dish. Dollop marshmallow creme over the top and gently swirl into the sweet potatoes with a spatula, leaving visible ribbons.
  5. Optional: Sprinkle mini marshmallows over the top.
  6. Broil for 1-2 minutes, watching closely, until the marshmallow is lightly browned and puffed.
  7. Let rest for 2 minutes before serving.

Notes

For dairy-free, use vegan butter. For lower sugar, reduce brown sugar to 2 tablespoons and use sugar-free marshmallow creme. The sweet potato base can be made up to 2 days ahead. Watch the broiler closely to prevent burning.
