  • 1 tablespoon vegetable oil (or canola/avocado oil)
  • 1/2 cup mixed vegetables (fresh or frozen, e.g., bell peppers, snap peas, carrots, broccoli)
  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
  • 1 teaspoon fresh ginger, grated (or 1/4 teaspoon ground ginger, optional)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (or hoisin sauce, or 1 tablespoon soy sauce + 1/2 teaspoon sugar)
  • 1 teaspoon sesame oil (optional but recommended)
  • Protein of choice (optional): 1/2 cup cooked chicken, shrimp, tofu, or 1 beaten egg
  • Optional garnishes: sliced green onions, sesame seeds, chili crisp, lime wedge

Instructions

  1. Boil the ramen noodles: Bring a small pot of water to a rolling boil. Add the ramen noodle block (discard seasoning packet). Cook for 2 minutes until noodles start to loosen but are still firm in the center. Drain immediately and rinse with cold water. Toss with a few drops of oil to prevent sticking.
  2. Prep your aromatics and vegetables: While noodles boil, mince garlic and grate ginger. Slice fresh vegetables into bite-sized pieces. If using frozen vegetables, measure them out.
  3. Mix the sauce: In a small bowl, combine soy sauce and oyster sauce. Stir until smooth. Set near the stove.
  4. Heat your skillet: Place skillet or wok over medium-high heat. Add vegetable oil and heat until shimmering (about 30 seconds).
  5. Cook the aromatics: Add minced garlic and grated ginger to hot oil. Stir constantly for about 15 seconds until fragrant. Do not burn.
  6. Add the vegetables: Toss in vegetables and stir-fry for 1-2 minutes. If using raw protein (chicken, shrimp), cook it first until done, then remove and add back later.
  7. Add the noodles: Push vegetables to one side. Add drained ramen noodles to empty space. Let sit undisturbed for 30 seconds to develop crispy edges. Then toss everything together.
  8. Pour in the sauce: Drizzle soy sauce mixture over noodles and vegetables. Toss and stir for 30-45 seconds until sauce coats evenly and noodles are heated through.
  9. Finish with sesame oil: Remove skillet from heat. Drizzle sesame oil over top and toss one final time. Taste and adjust seasoning if needed.
  10. Serve immediately: Transfer to a bowl. Top with garnishes of choice. Eat while hot and crispy.

Notes

Don’t overcook noodles in boiling stage—2 minutes is ideal. Rinse noodles with cold water to prevent gumminess. Let noodles sit in pan for crispy edges. Prep all ingredients before starting to cook. Double sauce if you like it saucier. For gluten-free, use tamari and gluten-free noodles.
