This Quick Pecan Pie Cobbler with Vanilla Ice Cream takes about ten minutes of actual work, then the oven does the rest. It’s a foolproof, crowd-pleasing dessert with a gooey caramelized pecan filling and soft cobbler topping.

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • 2 teaspoons vanilla extract
  • 1½ cups pecans, chopped
  • 1½ cups boiling water
  • Vanilla ice cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Place the butter in your baking dish and put it in the oven while it preheats. The butter should melt completely, about 5-7 minutes.
  2. While the butter melts, make the batter. In your mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the milk and vanilla extract, then stir until just combined. A few lumps are fine.
  3. Remove the baking dish from the oven carefully. The butter should be fully melted and sizzling slightly. Swirl it around to coat the bottom of the dish evenly.
  4. Pour the batter directly over the melted butter. Do not stir! Just pour it in and let it spread naturally.
  5. Sprinkle the chopped pecans evenly over the batter. Again, don’t stir.
  6. Sprinkle the brown sugar over the top. Sprinkle it evenly over the pecans and batter.
  7. Carefully pour the boiling water over everything. Pour it slowly and evenly over the top.
  8. Bake for 35-40 minutes. The cobbler is done when the top is golden brown and the edges are bubbly. The center should be set but still slightly jiggly.
  9. Let it cool for 10-15 minutes.
  10. Scoop into bowls and top with vanilla ice cream.

Notes

Do not stir the layers after pouring the batter, pecans, brown sugar, or water. The layers need to stay separate for the magic to happen. Let the cobbler cool for 10-15 minutes before serving to allow it to set. For best results, toast the pecans first at 350°F for 5-7 minutes to deepen their flavor. If the top is browning too quickly, tent loosely with foil around the 25-minute mark.
