A quick and easy one-pan chicken skillet with garlic butter sauce and tender-crisp green beans. Ready in under 25 minutes, this crowd-pleasing meal uses simple ingredients and is perfect for busy weeknights.

Ingredients

Scale
  • 4 boneless, skinless chicken thighs (about 1.5 pounds)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (regular or smoked)
  • 2 tablespoons olive oil
  • 12 ounces fresh green beans, trimmed
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • ¼ cup low-sodium chicken broth
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Prep your ingredients first: trim the ends off green beans, mince garlic, chop parsley if using, and pat chicken dry with paper towels.
  2. In a small bowl, mix salt, pepper, garlic powder, and paprika. Sprinkle evenly over both sides of chicken thighs and rub in. Let sit for 5 minutes while skillet heats.
  3. Place a large skillet over medium-high heat and add olive oil. Heat until shimmering.
  4. Place chicken thighs in skillet, presentation side down. Cook undisturbed for 5-6 minutes until deep golden crust forms and chicken releases easily.
  5. Flip chicken and cook for another 4-5 minutes until internal temperature reaches 165°F. Transfer to a plate and loosely cover with foil. Do not clean the skillet.
  6. Reduce heat to medium. Add butter to skillet and melt, scraping up browned bits. Add minced garlic and red pepper flakes (if using) and cook for about 30 seconds until fragrant.
  7. Add green beans and chicken broth. Stir, scraping bottom of pan. Cover and cook for 4-5 minutes until beans are bright green and tender-crisp.
  8. Return chicken to skillet, nestling among green beans. Warm through for about 2 minutes, spooning garlic butter sauce over chicken.
  9. Squeeze fresh lemon juice over everything, sprinkle with parsley if using, and serve immediately.

Notes

Pat chicken dry for best sear. Don’t overcrowd the pan. Let chicken rest before slicing. Watch garlic carefully to avoid burning. For frozen green beans, add straight from freezer and increase covered cooking time by 2-3 minutes. Leftovers keep in refrigerator for up to 3 days.
