This Quick Copycat Iced Gingerbread Oatmilk Chai is a five-minute, no-fuss holiday drink that tastes just like the expensive coffee shop version. Made with simple pantry spices and creamy oat milk, it’s the perfect cozy treat for busy weeknights.

Ingredients

Scale
  • 1 cup (240 ml) strong brewed chai concentrate (e.g., Tazo or Oregon Chai)
  • 1/2 cup (120 ml) unsweetened oat milk (barista blend recommended, e.g., Oatly or Califia Farms)
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • Pinch of black pepper
  • 1–2 tablespoons (15–30 ml) maple syrup or brown sugar simple syrup (optional, to taste)
  • 1/4 teaspoon vanilla extract (optional)
  • Ice cubes (for serving)
  • Optional garnish: cinnamon stick, star anise, or extra cinnamon

Instructions

  1. Mix the Spice Blend: In a small bowl, combine 1/2 teaspoon ground ginger, 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground cloves, 1/4 teaspoon ground nutmeg, and a pinch of black pepper. Stir until evenly distributed.
  2. Fill Your Glass with Ice: Take a tall glass and fill it to the top with ice cubes.
  3. Combine the Liquid Ingredients: In a mason jar or cocktail shaker, pour in 1 cup (240 ml) of chai concentrate and 1/2 cup (120 ml) of oat milk. Add 1-2 tablespoons (15-30 ml) of maple syrup or brown sugar simple syrup (if using) and a splash of vanilla extract.
  4. Add the Spices: Sprinkle in 1 teaspoon of the gingerbread spice blend.
  5. Shake It Like You Mean It: Screw the lid on tightly and shake vigorously for 15-20 seconds until the mixture is frothy and a warm caramel brown color.
  6. Pour and Serve: Pour the shaken mixture over the ice-filled glass. Stir gently if desired.
  7. Garnish and Enjoy: Sprinkle a pinch of extra cinnamon on top, or add a cinnamon stick and star anise. Serve immediately.

Notes

For best results, use barista blend oat milk for creaminess. Chill the chai concentrate and oat milk beforehand to prevent excessive ice melt. The spice blend can be made in bulk and stored in an airtight container for up to 6 months. This drink is best served fresh; do not store assembled drink.
