These Perfect Cranberry Brie Puff Pastry Bites are a quick and easy holiday appetizer made with frozen puff pastry, brie, and cranberry sauce. They come together in under 30 minutes and are always a crowd-pleaser.

  • 1 sheet frozen puff pastry (thawed according to package directions)
  • 4 oz brie cheese (cold, cut into ½-inch cubes)
  • ⅓ cup whole berry cranberry sauce (homemade or canned)
  • 1 large egg (beaten with 1 tablespoon water for egg wash)
  • 2 tablespoons fresh rosemary (finely chopped, plus extra for garnish)
  • Flaky sea salt (like Maldon)
  • Honey (optional, for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. On a lightly floured surface, gently unfold the thawed puff pastry sheet. Use a sharp knife or pizza cutter to cut it into 9 equal squares (about 3 inches each).
  3. Using the tip of a sharp knife, lightly score a border about ¼ inch from the edge of each square. Be careful not to cut all the way through.
  4. Place the pastry squares on the prepared baking sheet, spacing them about 1 inch apart.
  5. Place 1-2 cubes of brie in the center of each pastry square, inside the scored border.
  6. Spoon about 1 teaspoon of cranberry sauce over each piece of brie.
  7. Using a pastry brush, gently brush the edges of each pastry square with the beaten egg wash.
  8. Bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  9. Remove from the oven and immediately sprinkle with fresh rosemary and flaky sea salt. If using honey, drizzle it over the top now.
  10. Let cool on the baking sheet for 5 minutes.
  11. Transfer to a serving platter and garnish with additional fresh rosemary. Serve warm.

Notes

Keep the pastry cold for best rise. Don’t skip scoring the pastry. Use cold brie straight from the fridge. These are best served within 20-30 minutes of baking. For make-ahead, assemble on baking sheet, cover, and refrigerate up to 4 hours before baking.
