  • 1 tablespoon olive oil or melted butter
  • 1 teaspoon fine sea salt or kosher salt
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon onion powder (optional)
  • ½ teaspoon smoked paprika (optional)
  • ¼ teaspoon cayenne pepper (optional)
  • For sweet variation: 1 tablespoon maple syrup and ½ teaspoon cinnamon (optional)

Instructions

  1. Clean the seeds: Separate seeds from pumpkin pulp, rinse in a colander under cool water, and drain well.
  2. Dry the seeds thoroughly: Spread on a clean kitchen towel or paper towels, pat dry, and let air-dry for 5-10 minutes until dry to the touch.
  3. Preheat the air fryer to 320°F (160°C) for about 3 minutes.
  4. Season the seeds: In a medium bowl, combine dried seeds with oil and chosen seasonings. Toss to coat evenly.
  5. Air fry the seeds: Spread in a single layer in the air fryer basket (work in batches if needed). Cook at 320°F for 8-10 minutes, shaking the basket halfway through. Check at 8 minutes for doneness.
  6. Cool completely: Transfer seeds to a plate or baking sheet in a single layer and let cool for at least 10 minutes.
  7. Taste and adjust: Add more salt or seasoning if desired.

Notes

Don’t skip drying the seeds thoroughly to avoid chewiness. Shake the basket halfway through for even cooking. Seeds will continue to crisp as they cool. For oven method: spread on baking sheet and roast at 350°F for 15-20 minutes, stirring halfway.
