  • 4 cups low-sodium chicken or turkey stock (warmed)
  • 1/2 cup heavy cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and black pepper to taste

Instructions

  1. Prepare the fat: If using turkey drippings, let them settle in the fridge overnight. Scoop out 1/2 cup of solidified fat. If needed, add unsalted butter to reach 1/2 cup total fat. Melt the fat in a medium saucepan over medium heat.
  2. Make the roux: Sprinkle 1/2 cup flour over the melted fat. Whisk constantly and cook for 2-3 minutes until the mixture turns light golden and smells nutty.
  3. Whisk in the stock: Slowly pour in the warm stock, about 1 cup at a time, whisking constantly to prevent lumps. Simmer for 5 minutes, stirring frequently, until the gravy thickens.
  4. Add cream and seasoning: Reduce heat to low. Stir in heavy cream, Worcestershire sauce, thyme, and sage. Simmer for 2 more minutes. Taste and add salt and pepper as needed.
  5. Cool and store: Let the gravy cool to room temperature uncovered. Transfer to an airtight container and refrigerate for up to 3 days. The fat will solidify on top.

Notes

Always use warm stock to prevent lumps. Do not rush the roux; cook until nutty but not brown. Gravy thickens as it cools, so do not make it too thin initially. Can be frozen for up to 3 months. Reheat on low heat to prevent separation.
