A hearty, comforting taco soup made with ground beef, beans, and spices, topped with crunchy Fritos, cheese, and sour cream. It’s a quick, easy, and crowd-pleasing meal perfect for cold weather.

  • 1 pound ground beef (80/20 or 90/10)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • 32 ounces chicken broth (low-sodium)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup frozen corn or 1 can (15 oz) drained corn
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 2 tablespoons taco seasoning
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup Fritos, crushed
  • 1 cup shredded cheddar cheese
  • Sour cream for serving
  • Green onions, chopped
  • Avocado, sliced

Instructions

  1. Heat a large pot over medium-high heat. Add ground beef and break it up with a wooden spoon until crumbly and browned. Drain excess fat if necessary.
  2. Reduce heat to medium. Add butter to the pot. Once melted, add diced onion and cook until soft and translucent (about 3 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  3. Sprinkle taco seasoning, cumin, and chili powder over the beef and onions. Stir to coat and cook for 1 minute to bloom the spices.
  4. Pour in chicken broth. Add black beans, kidney beans, corn, and Rotel tomatoes (including juices). Stir to scrape up any browned bits from the bottom of the pot.
  5. Bring the soup to a boil, then reduce heat to low. Cover partially and simmer gently for 15-20 minutes to allow flavors to meld.
  6. Taste and season with salt and pepper as needed. Ladle into bowls and top with shredded cheddar cheese, crushed Fritos, sour cream, green onions, and avocado slices. Serve immediately.

Notes

For best texture, add Fritos just before serving to keep them crunchy. Store soup and toppings separately in the refrigerator for up to 4 days. Freeze soup (without toppings) for up to 3 months. When reheating, add a splash of broth if the soup is too thick. You can substitute ground turkey for beef or use vegetable broth for a vegetarian option.
