A moist, lean, and simple turkey meatloaf made with old-fashioned oats instead of breadcrumbs. This recipe balances flavor and texture for a healthy, crowd-pleasing weeknight dinner.

  • 1 cup old-fashioned rolled oats
  • 2 large eggs
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 0.5 cup tomato sauce (no added sugar)
  • 1 tbsp brown sugar

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×5 inch loaf pan.
  2. In a large mixing bowl, whisk together eggs, Worcestershire sauce, Dijon mustard, and half of the diced onion.
  3. Add the oats, remaining onion, salt, and pepper to the wet ingredients and mix gently.
  4. Add the ground turkey and gently fold it into the mixture until just combined; do not overmix.
  5. Transfer the mixture to the prepared loaf pan, pressing firmly to remove air pockets, and smooth the top.
  6. In a small saucepan, combine tomato sauce and brown sugar, heating until the sugar dissolves.
  7. Pour half of the warm glaze over the meatloaf.
  8. Bake for 45 minutes.
  9. Check the internal temperature with an instant-read thermometer; it should reach 165°F (74°C). Bake 5-10 minutes longer if needed.
  10. Remove from oven, pour remaining glaze over the top, and let rest for 10 minutes before slicing.

Notes

Do not overmix the meat to avoid a dense texture. Use a thermometer to ensure the turkey reaches 165°F. Let the loaf rest for 10 minutes to allow juices to redistribute. For a richer flavor, add grated Parmesan cheese. Can be substituted with ground chicken.
