  • 2 cups (180g) rolled oats (old-fashioned, not instant)
  • 1 cup (245g) pumpkin puree (100% pure, not pumpkin pie filling)
  • ⅓ cup (80ml) pure maple syrup
  • 1 large egg (or flax egg for vegan: 1 tbsp ground flaxseed + 3 tbsp water, let sit 5 minutes)
  • ¼ cup (60ml) coconut oil, melted (or melted butter or avocado oil)
  • ¼ cup (60ml) milk (dairy, almond, oat, or coconut)
  • 2 tablespoons (25g) brown sugar (or coconut sugar)
  • 1 ½ teaspoons pumpkin pie spice (or 1 tsp cinnamon + ½ tsp ginger + ¼ tsp nutmeg + pinch cloves)
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract (optional but recommended)
  • ½ cup chocolate chips, chopped nuts, or dried cranberries (optional mix-ins)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. Measure out 1 cup of rolled oats and add to a blender or food processor. Pulse until they turn into a fine flour. Pour into a large bowl.
  3. To the oat flour, add the remaining 1 cup of whole rolled oats, pumpkin pie spice, cinnamon, baking powder, and salt. Whisk to combine.
  4. In a medium bowl, whisk together pumpkin puree, maple syrup, egg, melted coconut oil, milk, brown sugar, and vanilla extract until smooth.
  5. Pour the wet ingredients into the dry ingredients. Fold with a spatula until just combined. Do not overmix. Fold in any optional mix-ins.
  6. Scrape the batter into the prepared pan. Spread evenly, pressing into corners. Wet the spatula slightly if sticky.
  7. Bake for 22-25 minutes, until edges are golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool in the pan on a wire rack for at least 20 minutes. Then use the parchment overhang to lift out and transfer to a cutting board. Cool completely before slicing.
  9. Slice into 9 squares (3×3 grid) or 12 smaller rectangles. Wipe knife clean between cuts for neat edges.

Notes

The batter will be thick—do not add more milk. Let bars cool completely before slicing to prevent crumbling. For best texture, use room temperature egg and milk. Bars keep in the fridge for up to 5 days and freeze well for up to 3 months. The spices intensify after a day in the fridge, so making them ahead is recommended.
