  • 1 cup corn kernels (fresh or frozen and thawed)
  • 1 large tomato, finely diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1 ripe avocado, peeled and pitted
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 garlic clove, minced
  • 1/4 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 23 tablespoons water (to thin dressing as needed)

Instructions

  1. Rinse and drain the black beans well to remove excess salt. Dice the tomato, red bell pepper, red onion, and jalapeño finely. Chop the fresh cilantro. Place everything together in a medium mixing bowl.
  2. In a food processor or blender, add the ripe avocado, lime juice, olive oil, minced garlic, ground cumin, salt, and pepper. Blend until smooth. Slowly add water, one tablespoon at a time, until the dressing reaches a pourable but creamy consistency. Taste and adjust seasoning if needed.
  3. Pour the creamy avocado dressing over the mixed veggies and beans. Gently fold everything together with a spatula or large spoon, avoiding smashing the avocado too much to keep some texture.
  4. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to let the flavors meld and the dressing thicken slightly.
  5. Give the cowboy caviar a quick stir before serving. Adjust salt, pepper, or lime juice if needed. Serve with tortilla chips, fresh veggies, or as a topping for grilled chicken or fish.

Notes

Use ripe but firm avocado to avoid watery dressing. Remove tomato seeds to prevent sogginess. Lime juice helps prevent avocado browning. Chill for at least 15 minutes for best flavor. Can substitute black beans with pinto or kidney beans. For a dairy-free creamy alternative, use coconut cream or dairy-free yogurt instead of avocado.
