Flaky Sheet-Pan Salmon with Lemon Dill Sauce

A quick and elegant weeknight dinner featuring tender, flaky salmon baked on a sheet pan with a bright, emulsified lemon dill butter sauce.

  • 4 salmon fillets (68 oz each, center-cut)
  • 4 tablespoons unsalted butter
  • 2 fresh lemons (one for juice/zest, one sliced into rounds)
  • 1 generous handful fresh dill, chopped finely
  • 2 cloves garlic, minced
  • Extra virgin olive oil (for brushing)
  • Kosher salt and black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a 13×9 inch rimmed baking sheet with parchment paper and lightly grease with olive oil.
  2. Pat salmon fillets dry with paper towels. Season both sides generously with kosher salt and black pepper.
  3. Place salmon fillets on the prepared pan, skin-side down. Slice one lemon into thin rounds and place them on the bottom of the pan underneath the salmon.
  4. Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork but remains slightly translucent in the center.
  5. While salmon bakes, melt butter in a small saucepan over low heat. Add minced garlic and cook for 30 seconds until fragrant (do not brown).
  6. Remove saucepan from heat. Stir in the juice and zest of one lemon, chopped fresh dill, and red pepper flakes.
  7. Remove salmon from oven and immediately brush or spoon the warm lemon dill sauce over the hot fish.
  8. Let rest for 2 minutes before serving.

Notes

Pat the salmon dry before seasoning to ensure proper texture and prevent steaming. Do not overcrowd the pan. If your oven runs hot, check the fish at the 10-minute mark. The sauce should be kept on low heat to prevent the butter from separating.
