These easy turkey pesto pinwheels are a quick, delicious, and fun lunchbox idea made with simple ingredients like turkey, pesto, cream cheese, and tortillas. Perfect for busy mornings, they hold up beautifully and are a crowd-pleaser for both kids and adults.

Ingredients

Scale
  • 4 large flour tortillas (10-inch size)
  • 1 cup prepared basil pesto
  • 810 thin slices turkey breast
  • 4 ounces cream cheese, softened
  • 46 slices provolone or mozzarella cheese
  • 1 cup fresh spinach leaves
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • Salt and black pepper to taste

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 15 minutes or microwaving for 10-15 seconds.
  2. In a small bowl, combine the softened cream cheese and 1/4 cup pesto. Mix until smooth. Season with salt and pepper to taste.
  3. Lay one tortilla flat on a cutting board. If cold, warm in the microwave for 10-15 seconds to make pliable.
  4. Spread about 2 tablespoons of the cream cheese-pesto mixture evenly over the tortilla, leaving a 1/2-inch border.
  5. Layer 2-3 slices of turkey on the bottom third of the tortilla, overlapping slightly. Add 1-2 slices of cheese, a handful of spinach, and a sprinkle of sun-dried tomatoes.
  6. Starting from the bottom edge, roll the tortilla tightly away from you, tucking in the fillings as you go. Place seam-side down.
  7. Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Refrigerate for at least 30 minutes.
  8. Unwrap the chilled roll and slice into 1-inch thick rounds using a sharp knife. Trim the ends if needed.
  9. Arrange the pinwheels in a lunchbox or serving dish. Serve cold or at room temperature.

Notes

Chilling is crucial for clean slices. Use room-temperature tortillas to prevent cracking. For best flavor, make the night before. To prevent sogginess, pat spinach dry and spread cream cheese evenly to the edges.
