  • 8 oz (225g) boneless, skinless chicken breast
  • 4 oz (115g) cream cheese, softened
  • 1/3 cup (80ml) buffalo wing sauce
  • 1/4 cup (30g) shredded sharp cheddar cheese
  • 1/4 cup (30g) shredded Monterey Jack cheese
  • 1 tablespoon (15ml) ranch dressing (optional)
  • Celery sticks, carrot sticks, and tortilla chips for serving

Instructions

  1. Place the 8 oz chicken breast in the bottom of your small slow cooker.
  2. Cut the softened cream cheese into a few cubes and scatter them over the chicken.
  3. Drizzle the 1/3 cup buffalo wing sauce over the top. If using, add the optional ranch dressing. Give everything a quick stir to coat the chicken.
  4. Sprinkle the shredded cheddar and Monterey Jack over the top. Do not stir.
  5. Cover the slow cooker and cook on LOW for 2 to 3 hours, or on HIGH for 1 to 1.5 hours, until the chicken is cooked through and shreds easily (internal temperature 165°F / 74°C).
  6. Using two forks, shred the chicken directly in the slow cooker. Stir everything together until the cream cheese is fully incorporated and the dip is smooth and creamy.
  7. Let the dip sit on ‘Warm’ for about 10 minutes to allow flavors to meld.
  8. Serve immediately with celery sticks, carrot sticks, and tortilla chips.

Notes

If the dip looks thin after shredding, let it sit on ‘Warm’ for 10-15 minutes to thicken. If too thick, stir in a tablespoon of milk or chicken broth. For best results, use softened cream cheese and shred the chicken rather than chopping it.
