A quick and creamy overnight oats recipe with peanut butter and protein, perfect for busy mornings. Ready in 5 minutes and keeps you full until lunch.

  • 1/2 cup (50g) rolled oats
  • 1/2 cup (120ml) milk of your choice
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mason jar or small container, combine 1/2 cup rolled oats, 1 tablespoon chia seeds (if using), and a tiny pinch of salt. Stir to distribute evenly.
  2. Add 1/2 cup milk, 1/4 cup Greek yogurt, 2 tablespoons creamy peanut butter, 1 tablespoon honey or maple syrup, and 1/2 teaspoon vanilla extract.
  3. Stir thoroughly for at least 30 seconds, making sure the peanut butter is fully incorporated. Scrape the bottom and sides of the jar.
  4. Adjust consistency if needed: add an extra tablespoon of milk if too thick, or an extra tablespoon of oats if too thin.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. Serve cold or microwave for 45-60 seconds if desired. Add toppings like sliced banana, extra peanut butter, or cinnamon.
  7. Enjoy immediately or store in the fridge for up to 4 days.

Notes

Warm the peanut butter for 10-15 seconds in the microwave if it’s thick. Layer dry ingredients at the bottom and wet on top for easier mixing. Double the batch for meal prep. The oats taste even better on day two.
