A cozy and easy overnight cinnamon roll casserole topped with luscious cream cheese frosting, perfect for busy mornings or lazy weekends. This recipe skips the rise time of traditional cinnamon rolls but delivers soft, buttery, and sweet flavors with a comforting cinnamon kick.

Ingredients

Scale
  • 1 package (about 12 oz/340 g) refrigerated cinnamon rolls with icing (Pillsbury recommended)
  • 8 oz (225 g) cream cheese, softened
  • 1/4 cup (60 g) unsalted butter, melted
  • 1/2 cup (100 g) granulated sugar
  • 1 tsp ground cinnamon
  • 2 large eggs, room temperature
  • 1/2 cup (120 ml) whole milk or dairy-free alternative
  • 1 tsp vanilla extract
  • Powdered sugar for frosting drizzle (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or cooking spray.
  2. Unroll the cinnamon rolls and cut each roll into quarters. Spread the pieces evenly in the baking dish, pressing down gently.
  3. In a large bowl, whisk together eggs, milk, vanilla extract, granulated sugar, and ground cinnamon until combined.
  4. Pour the custard evenly over the cinnamon roll pieces. Press rolls down gently to soak up the liquid. Let rest at room temperature for 30 minutes to 1 hour or cover and refrigerate overnight.
  5. Prepare the cream cheese frosting by beating softened cream cheese with melted butter until smooth. Gradually add the canned icing from the cinnamon rolls and mix until blended. Add powdered sugar if a thicker frosting is desired.
  6. Bake the casserole for 35-40 minutes until the top is golden brown and custard is set. Cover edges with foil after 25 minutes if browning too fast.
  7. Remove from oven and let cool for 10 minutes. Drizzle cream cheese frosting generously over the warm casserole.
  8. Serve warm and enjoy immediately.

Notes

Do not skip the soaking step for best texture. Use room-temperature eggs and softened cream cheese for smooth mixing. Cover edges with foil if browning too fast. Frosting can be softened in microwave if too thick. The casserole tastes better the next day when reheated gently.
