  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 ¾ cups all-purpose flour (220g)
  • ¾ cup granulated sugar (150g)
  • ½ cup light brown sugar, packed (100g)
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • 2 large eggs, room temperature
  • ½ cup vegetable oil (120ml)
  • ⅓ cup milk, room temperature (80ml)
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar (for swirl)
  • 1 tablespoon ground cinnamon (for swirl)
  • 1 tablespoon melted butter (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line a 9×5-inch loaf pan with parchment paper, leaving about 2 inches of overhang on the long sides. Lightly grease the exposed sides with butter or nonstick spray.
  2. Peel and dice the apples into small, even cubes (about ¼-inch). Place in a small bowl and toss with 2 tablespoons granulated sugar and 1 teaspoon cinnamon. Set aside.
  3. In a large mixing bowl, whisk together the flour, ¾ cup granulated sugar, brown sugar, baking powder, baking soda, salt, 2 teaspoons cinnamon, and nutmeg. Break up any lumps, especially from the brown sugar.
  4. Make a well in the center of the dry ingredients. Add the eggs, oil, milk, and vanilla extract. Whisk until just combined (about 20-30 seconds). Do not overmix; a few small lumps are fine.
  5. Using a rubber spatula, gently fold the cinnamon-sugar apple mixture into the batter until evenly incorporated. The batter will be thick and slightly chunky.
  6. In a small bowl, mix together 2 tablespoons sugar, 1 tablespoon cinnamon, and 1 tablespoon melted butter to form a thick paste for the cinnamon swirl.
  7. Pour half of the batter into the prepared loaf pan and spread evenly. Dollop half of the cinnamon swirl mixture on top and gently swirl into the batter with a butter knife or skewer. Add the remaining batter, spread gently, and repeat with the remaining swirl mixture. Optionally, sprinkle extra cinnamon sugar on top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top browns too quickly (around 40 minutes), tent loosely with aluminum foil.
  9. Let the bread cool in the pan for 15 minutes. Then, using the parchment paper handles, lift it out and transfer to a cooling rack. Cool completely before slicing (about 1-2 hours).

Notes

For a dairy-free version, use melted coconut oil instead of butter in the swirl and swap the milk for unsweetened almond or oat milk. For a gluten-free option, use a 1:1 gluten-free baking flour blend containing xanthan gum. The bread tastes even better the next day as flavors meld.
