A quick and fun twist on the classic peanut butter and jelly sandwich, these mini PB&J sushi rolls are perfect for kids’ lunchboxes and snacks. They are easy to make, mess-free, and kid-approved.

Ingredients

  • White or whole wheat sandwich bread, crusts removed
  • Peanut butter (creamy or crunchy, unsweetened or lightly sweetened)
  • Jelly or jam (grape, strawberry, raspberry, or any preferred flavor)
  • Optional: honey for extra sweetness
  • Optional: banana slices for a fruity twist
  • Optional: sunflower seed butter for nut-free version

Instructions

  1. Lay out bread slices on a cutting board and trim off the crusts to create soft, uniform squares about 4×4 inches.
  2. Flatten each bread slice gently using a rolling pin or your hands to make it pliable.
  3. Spread about 1 tablespoon of peanut butter evenly on each slice.
  4. Spread about 1 teaspoon of jelly or jam thinly over the peanut butter.
  5. Starting from one edge, roll the bread slice tightly into a log, tucking and compacting as you go.
  6. Using a sharp knife, slice each rolled sandwich into 1-inch bite-sized pieces, about 4-5 pieces per slice.
  7. Arrange the mini PB&J sushi rolls neatly in a lunchbox or on a plate and serve.

Notes

Use fresh, soft bread for easier rolling. Spread peanut butter and jelly thinly to avoid sogginess. Use a sharp knife to slice rolls cleanly.
