Easy Maple Roasted Brussels Sprouts with Bacon

Crispy, caramelized Brussels sprouts roasted with salty bacon and sweet maple syrup. This easy side dish comes together in under 30 minutes and is a crowd-pleaser that even picky eaters love.

  • 1.5 lbs (about 680g) Brussels sprouts, trimmed and halved
  • 6 slices (about 150g) thick-cut bacon, chopped
  • 3 tablespoons (45ml) pure maple syrup
  • 2 tablespoons (30ml) olive oil
  • ½ teaspoon (3g) fine sea salt
  • ¼ teaspoon (1g) freshly ground black pepper

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Rinse the Brussels sprouts under cold water and pat them dry. Trim off the tough stem ends and remove any yellow or damaged outer leaves. Cut each sprout in half lengthwise through the stem. Quarter any large sprouts for even cooking.
  3. Chop the bacon crosswise into ½-inch pieces.
  4. In a large mixing bowl, combine the halved Brussels sprouts, chopped bacon, olive oil, maple syrup, salt, and pepper. Toss until every sprout is well coated.
  5. Spread the mixture onto the prepared baking sheet in a single, even layer. Do not overcrowd.
  6. Roast for 20-25 minutes, flipping the sprouts and redistributing the bacon halfway through (after 12-15 minutes). Roast until the sprouts are tender on the inside and deeply caramelized on the outside, with crispy bacon.
  7. Check for doneness: a fork should slide easily into the thickest part of a sprout. Serve immediately.

Notes

For extra-crispy bacon, pre-cook the chopped bacon in a skillet for 2-3 minutes before adding to the sprouts. To prevent the maple syrup from burning, keep an eye on the sprouts during the last 5 minutes of roasting and tent with foil if browning too quickly. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in the oven or air fryer for best results.
