  • 1 tablespoon honey or maple syrup mixed with 1 tablespoon warm water

Instructions

  1. Macerate the strawberries: In a small bowl, combine the sliced strawberries, 1 tablespoon honey, lemon juice, and a pinch of salt. Stir gently to coat. Let sit for 10-15 minutes while you prepare the other components.
  2. Blend the cream base: In a blender or food processor, combine the Greek yogurt, cottage cheese, 2 tablespoons honey, vanilla extract, and lemon zest (if using). Blend on high for 30-45 seconds until completely smooth and creamy.
  3. Whip the cream: Transfer the blended mixture to a medium mixing bowl. Using a whisk or electric hand mixer, whip for 2-3 minutes until it becomes light and fluffy, almost like a soft whipped cream.
  4. Prepare the cake: Cut the angel food cake cups into 1-inch cubes. You should have about 1 1/2 cups of cake cubes. In a small bowl, mix the remaining 1 tablespoon honey with 1 tablespoon warm water. Lightly drizzle this over the cake cubes and toss gently to coat.
  5. Layer the trifles: Start with a layer of cake cubes at the bottom of each jar — about 1/4 of the total cake. Top with a generous spoonful of macerated strawberries and their juices. Add a layer of the whipped cream mixture, about 2-3 tablespoons. Repeat the layers: cake, strawberries, cream. End with a final dollop of cream on top.
  6. Chill (optional but recommended): Cover the jars and refrigerate for at least 30 minutes, or up to 4 hours. This allows the flavors to meld and the cake to absorb the strawberry syrup.
  7. Garnish and serve: Right before serving, top each trifle with a few fresh strawberry slices and a tiny sprinkle of lemon zest or a mint leaf if you have it. Serve cold.

Notes

Don’t skip the salt in the strawberries — it enhances sweetness. Blend the cottage cheese thoroughly for a smooth texture. Let the berries sit for the full 10-15 minutes to develop syrup. Use room temperature yogurt for better whipping. Layer juiciest strawberries in the middle for even flavor. Can be made ahead by preparing components separately up to 24 hours in advance; assemble no more than 4 hours before serving.
