This easy leftover turkey pot pie turns holiday leftovers into a creamy, comforting weeknight treasure with a flaky, golden crust. It’s the best family meal for using up turkey after Thanksgiving or Christmas.

  • 3 cups cooked turkey, shredded or diced
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, diced (about 1 cup)
  • 2 medium carrots, peeled and diced (about 1 cup)
  • 2 celery stalks, diced (about 1/2 cup)
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup whole milk
  • 2 ounces cream cheese, softened
  • 1 cup frozen peas and carrots mix
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • Salt and black pepper to taste
  • 1 package (14 ounces) refrigerated pie crusts
  • 1 large egg, beaten

Instructions

  1. Preheat your oven to 400°F (200°C). Take pie crusts out of the fridge to soften slightly, about 10 minutes.
  2. Melt the butter in a large skillet over medium heat. Add diced onion, carrots, and celery. Cook for 5-7 minutes until softened and onion is translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle flour over the vegetables and stir constantly for 1-2 minutes to create a roux.
  5. Slowly pour in chicken broth while whisking to prevent lumps. Add milk and stir until mixture thickens, about 3-4 minutes.
  6. Reduce heat to low and stir in softened cream cheese until melted and smooth. Season with thyme, sage, salt, and pepper. Adjust seasoning to taste.
  7. Fold in shredded turkey and frozen peas and carrots mix. Stir until well combined and heated through. Remove from heat.
  8. Roll out one pie crust and fit it into a 9-inch pie dish. Pour turkey filling into the crust.
  9. Place the second pie crust on top. Crimp edges to seal. Cut 4-5 small slits in the top crust. Brush with beaten egg wash.
  10. Bake for 30-35 minutes until crust is deep golden brown and filling is bubbly. Let cool for 10 minutes before slicing.

Notes

Don’t skip the cream cheese—it gives the sauce a velvety richness. Use leftover turkey that’s not too dry; dark meat works best. Bake on the lowest oven rack to prevent a soggy bottom crust. Let the pie rest for 10 minutes before serving to allow the filling to set.
