Easy Herb Butter Roasted Turkey Breast Recipe

  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon
  • 1 bone-in, skin-on turkey breast (57 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 350°F (175°C). Take the turkey breast out of the fridge and let it sit at room temperature for about 30 minutes. Pat it completely dry with paper towels.
  2. In a small bowl, combine the softened butter, chopped rosemary, sage, thyme, minced garlic, 1 teaspoon salt, 1/2 teaspoon pepper, and lemon zest. Mash it all together with a fork until well combined.
  3. Gently slide your fingers under the skin of the turkey breast, being careful not to tear it, to create a pocket between the skin and the meat.
  4. Take about two-thirds of the herb butter and push it under the skin, spreading it evenly over the meat. Rub the remaining butter all over the outside of the skin. Tuck the lemon slices under the skin as well.
  5. Drizzle the olive oil over the turkey breast, then sprinkle with the remaining 1 teaspoon salt and 1/2 teaspoon pepper. Rub it in gently.
  6. Place the turkey breast on a rack in your roasting pan (or on foil coils). Pour the chicken broth into the bottom of the pan, being careful not to splash the skin.
  7. Roast for about 15-18 minutes per pound, or until the internal temperature in the thickest part of the breast reaches 155°F (68°C). Start checking at the 1-hour mark. If the skin is getting too dark before the meat is done, tent loosely with foil.
  8. Remove the turkey from the oven and transfer it to a cutting board. Let it rest, uncovered, for at least 15-20 minutes.
  9. Slice the breast against the grain into even pieces. Drizzle with any pan juices if you like. Serve warm.

Notes

Don’t skip the resting time; it allows juices to redistribute. Use a meat thermometer for best results. If skin isn’t crispy, increase oven to 425°F for last 5-10 minutes. Leftover herb butter can be used on vegetables or bread.
