Ingredients

Scale
  • 3 large ripe avocados
  • 2 tablespoons fresh lime juice
  • 1/4 cup finely diced red onion
  • 1 medium Roma tomato, seeded and diced
  • 1/4 cup chopped fresh cilantro, plus extra for garnish
  • 1 small jalapeño, seeded and minced
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 4–6 whole pitted black olives
  • 1 cherry tomato, halved
  • Tortilla chips for serving

Instructions

  1. Prep your ingredients (5 minutes): Halve the limes and juice them into a small bowl. Finely dice the red onion. Seed and dice the Roma tomato, removing jelly and seeds completely. Mince the jalapeño after removing seeds and ribs. Chop the cilantro and set aside a few leaves for garnish.
  2. Cut and scoop the avocados (2 minutes): Slice each avocado in half lengthwise around the pit. Twist to separate, remove the pit, and scoop the flesh into a large mixing bowl.
  3. Mash to desired consistency (2 minutes): Add lime juice and salt to the avocados immediately to prevent browning. Mash with a fork or potato masher until slightly chunky or smooth, as preferred.
  4. Mix in the flavor builders (3 minutes): Fold in diced red onion, diced tomato, chopped cilantro, minced jalapeño, and black pepper. Stir gently until evenly distributed. Taste and adjust salt or lime juice as needed.
  5. Shape the monster base (1 minute): Transfer guacamole to a serving bowl or platter. Spread into an even, slightly domed oval shape using a spatula or spoon.
  6. Create the monster face (5 minutes): Place two whole black olives in the upper portion for eyes, about 2 inches apart. Place the halved cherry tomato below the eyes for the mouth, pressing gently into the guacamole.
  7. Add finishing touches (2 minutes): Use additional black olive slices for eyebrows. Sprinkle reserved cilantro leaves around the edges for hair. Press extra tortilla chips vertically around the perimeter for a graveyard look.
  8. Serve immediately or refrigerate (1 minute): Best served within 30 minutes. To prep ahead, make guacamole base without decorations, cover tightly with plastic wrap pressed against the surface, and refrigerate. Add decorations just before serving.

Notes

For best results, use ripe but firm avocados so the guacamole holds its shape. Prep all decorative ingredients before mashing to prevent browning. To store leftovers, press plastic wrap directly onto the surface and refrigerate for up to 24 hours. For a milder onion flavor, rinse diced red onion under cold water.
