These Easy Crustless Ham and Cheese Pinwheels are a quick, low-carb snack or meal that comes together in about 25 minutes. Made with simple ingredients like eggs, ham, and cheese, they’re perfect for busy mornings, meal prep, or as a crowd-pleasing appetizer.

Ingredients

Scale
  • 6 large eggs, room temperature
  • 1/4 cup milk (whole milk preferred, or 2% or unsweetened almond milk)
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 cup shredded low-moisture mozzarella cheese
  • 6 slices deli ham (about 4 ounces total, thin slices)
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon chopped fresh chives or green onions (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish with butter or non-stick spray.
  2. In a medium mixing bowl, whisk together the eggs and milk until completely combined and slightly frothy, about 30 seconds. Add the salt, pepper, and garlic powder, and whisk again.
  3. Pour the egg mixture into the prepared baking dish, tilting gently to spread evenly into a thin layer (about 1/4 inch deep).
  4. Bake the egg layer for 8-10 minutes, until just set and no longer jiggly in the center. The edges should pull away from the dish slightly. Do not overbake.
  5. Let the egg layer cool in the dish for 2-3 minutes. This is crucial for easy rolling.
  6. Spread the softened cream cheese evenly over the egg layer using a small spatula or the back of a spoon.
  7. Sprinkle the shredded cheddar and mozzarella over the cream cheese, reserving about 2 tablespoons for the top. Ensure cheese reaches the edges.
  8. Layer the ham slices over the cheese, overlapping slightly to cover the entire surface.
  9. Starting from one short end, carefully roll the egg layer into a tight log using a spatula to lift the edge. Roll slowly with even pressure.
  10. Place the rolled log seam-side down on a cutting board and let it rest for 2 minutes.
  11. Slice the log into 8 even pinwheels, about 1 inch thick each, using a sharp serrated knife with a gentle sawing motion. Clean the knife between cuts if needed.
  12. Place the pinwheels cut-side up back in the baking dish (or a new greased dish), fitting them snugly. Sprinkle the reserved cheese on top.
  13. Bake for 10-12 minutes, until the cheese is melted and bubbly and the edges are golden brown. Let cool for 2 minutes before serving.

Notes

For best results, use room temperature eggs and cream cheese. Shred cheese from a block for smoother melting. Let the egg layer cool properly before rolling to prevent tearing. To make ahead, assemble completely (roll, slice, place in dish) up to 24 hours in advance, refrigerate, and bake just before serving (add 2-3 minutes to baking time). Freezer-friendly: freeze cooled pinwheels in a single layer, then transfer to a freezer bag for up to 3 months. Reheat from frozen at 375°F for 12-15 minutes.
