  • 1.5 pounds boneless, skinless chicken breasts (or thighs)
  • 2 cans (15 oz each) white beans, drained and rinsed (cannellini or great northern)
  • 1 can (15 oz) corn, drained (or 1.5 cups frozen corn)
  • 1 can (4 oz) diced green chiles (mild)
  • 4 cups low-sodium chicken broth
  • 1 block (8 oz) cream cheese, softened and cut into cubes
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon cayenne pepper
  • For toppings: shredded cheddar cheese, sour cream or Greek yogurt, fresh cilantro, tortilla chips, lime wedges, diced avocado

Instructions

  1. Prep your ingredients: Dice the onion and mince the garlic. Drain and rinse the beans. Drain the corn and green chiles. Cut the cream cheese into cubes.
  2. Layer everything in the crockpot: Place the chicken breasts at the bottom. Add the diced onion, minced garlic, drained beans, corn, and green chiles on top.
  3. Add the broth and seasonings: Pour the chicken broth over everything. Sprinkle the cumin, oregano, garlic powder, onion powder, salt, and pepper over the top. Stir gently to combine.
  4. Cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, remove the chicken breasts from the crockpot and shred with two forks. Return the shredded chicken to the pot.
  6. Add the cubed cream cheese to the chili. Stir gently until completely melted and the broth is creamy, about 5 minutes.
  7. Taste and adjust seasoning as needed. Add a squeeze of lime juice if desired.
  8. Serve hot with desired toppings.

Notes

For a richer flavor, brown the chicken in a hot skillet before adding to the crockpot. To thicken the chili, mash some beans against the side of the pot before adding cream cheese. This chili tastes even better the next day. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
