Easy Crockpot Queso Dip Recipe Perfect for a Crowd

This easy crockpot queso dip that feeds a crowd is the hero of every party, and it barely takes any real work. It’s the perfect set-it-and-forget-it recipe for game days, potlucks, or any gathering.

  • 1 lb (450g) Velveeta cheese, cubed
  • 1 can (10 oz / 284g) Ro-Tel tomatoes and green chilies, undrained
  • 1 cup (240 ml) whole milk
  • 1/2 lb (225g) ground beef or bulk sausage (optional)
  • 1/2 cup (80g) diced onion
  • 1 tsp (5g) garlic powder
  • 1 tsp (5g) cumin
  • 1/2 tsp (2.5g) chili powder
  • Salt and pepper to taste
  • Optional: 1/4 cup (60ml) pickled jalapeño juice

Instructions

  1. Brown the meat (optional but recommended): If using ground beef or sausage, cook it in a skillet over medium heat until browned and crumbled. Drain off any excess fat.
  2. Prep the cheese: While the meat is cooking, cut your Velveeta into 1-inch cubes.
  3. Layer everything in the crockpot: Start with the cubed Velveeta at the bottom. Add the undrained can of Ro-Tel, the milk, the cooked meat (if using), the diced onion, garlic powder, cumin, and chili powder. Give it a quick stir.
  4. Cook on low: Cover and cook on low for 1.5 to 2 hours, or on high for 45 minutes to 1 hour, until the cheese is completely melted and the mixture is smooth and bubbly around the edges. Stir once about halfway through.
  5. Stir and adjust: Once the cheese is melted, give it a good stir. Taste and adjust seasoning. Add the optional pickled jalapeño juice if desired. If too thick, add a splash more milk; if too thin, cook uncovered for 10-15 minutes.
  6. Keep warm: Switch the slow cooker to the ‘warm’ setting. The queso will stay perfect for hours.
  7. Serve with your favorite dippers: Tortilla chips, pretzel bites, raw veggies, or over nachos.

Notes

For best results, use block Velveeta (not pre-shredded) and do not drain the Ro-Tel. The queso will thicken as it sits; stir in a splash of milk every hour to maintain dippable consistency. The optional pickled jalapeño juice adds brightness without heat. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
