  • 2 lbs (900g) bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 1/2 cup (170g) honey
  • 1/2 cup (120ml) low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tablespoons (30g) tomato paste
  • 1 tablespoon (15ml) rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water
  • Chopped green onions, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions

  1. Season the chicken: Pat the chicken thighs dry with paper towels. Sprinkle both sides generously with salt and black pepper.
  2. Make the sauce: In a small bowl, whisk together the honey, low-sodium soy sauce, minced garlic, tomato paste, and rice vinegar until smooth.
  3. Layer the chicken: Place the seasoned chicken thighs in the bottom of your slow cooker, skin side up if possible, in a single layer.
  4. Pour the sauce: Pour the sauce mixture evenly over the chicken, ensuring each piece is coated.
  5. Cook low and slow: Cover and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is fall-apart tender.
  6. Thicken the sauce: About 30 minutes before serving, remove the chicken to a plate. Whisk the cornstarch slurry into the slow cooker. Turn to HIGH, cover, and cook for 20-30 minutes, stirring occasionally, until the sauce thickens to a glossy glaze.
  7. Finish and serve: Return the chicken to the slow cooker, spoon the thickened sauce over the top, and heat through for about 5 minutes. Garnish with green onions and sesame seeds if desired. Serve immediately over rice, noodles, or vegetables.

Notes

For extra flavor, brown the chicken thighs in a hot skillet before adding to the crockpot. Don’t lift the lid during cooking. If the sauce isn’t thickening after 20 minutes, add another teaspoon of cornstarch mixed with a tablespoon of water. Leftovers taste even better the next day.
