Tender, juicy chicken thighs slow-cooked in a sweet and savory honey garlic sauce. This 4-ingredient recipe is perfect for busy weeknights and requires minimal prep.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken thighs (about 68 thighs)
  • 1/2 cup honey
  • 1/2 cup low-sodium soy sauce
  • 6 cloves garlic, minced
  • Sesame seeds (for garnish, optional)
  • Chopped green onions (for garnish, optional)
  • Cooked rice or steamed vegetables (for serving)

Instructions

  1. In a small mixing bowl, whisk together honey, low-sodium soy sauce, and minced garlic until well combined.
  2. Place chicken thighs in the bottom of a 6-quart slow cooker, arranging them in a single layer if possible. Pour the sauce evenly over the chicken.
  3. Cover and cook on LOW for 4-5 hours, until chicken is fork-tender and reaches an internal temperature of 165°F (74°C).
  4. Optional: Transfer chicken to a plate. Pour cooking liquid into a small saucepan and bring to a boil. Simmer for 5-7 minutes until thickened. For a thicker sauce, whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) and cook for 1 minute.
  5. Return chicken to the slow cooker or a serving platter and pour thickened sauce over the top. Coat evenly.
  6. Garnish with sesame seeds and chopped green onions. Serve immediately over rice or steamed vegetables.

Notes

For best results, use low-sodium soy sauce to prevent the dish from becoming too salty. Pat chicken thighs dry before adding to the crockpot. Avoid peeking during cooking to maintain heat. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
