Easy Crockpot Buffalo Chicken Sliders Game Day Recipe

These easy crockpot buffalo chicken sliders are the perfect game day appetizer—set it and forget it, then assemble and bake for a crowd-pleasing, messy-in-the-best-way finger food that disappears fast.

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 packet ranch dressing mix
  • 4 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 12 slider buns (e.g., Hawaiian sweet rolls or brioche)
  • Optional toppings: blue cheese crumbles, sliced green onions, extra buffalo sauce for drizzling

Instructions

  1. Place 2 pounds of chicken breasts in the bottom of a 6-quart crockpot.
  2. Pour 1 cup buffalo wing sauce over the chicken. Add the packet of ranch dressing mix and 4 tablespoons melted butter. Stir to coat the chicken.
  3. Cook on high for 4 hours or low for 6-7 hours, until the chicken shreds easily with a fork.
  4. Carefully remove the chicken from the crockpot and place in a mixing bowl. Use two forks to shred into bite-sized pieces.
  5. Add the softened cream cheese and about 1/2 cup of the cooking liquid from the crockpot to the shredded chicken. Stir until the cream cheese is fully melted and the mixture is creamy and thick.
  6. Preheat oven to 375°F. Split the slider buns in half and place the bottom halves on a baking sheet.
  7. Spoon the buffalo chicken mixture evenly over the bottom buns. Sprinkle with 1 cup shredded cheddar cheese. Place the top buns on.
  8. Bake for 10-12 minutes, until the cheese is melted and the buns are lightly toasted.
  9. Remove from the oven and let cool for a minute. Add optional toppings if desired. Serve warm.

Notes

Don’t skip adding some cooking liquid back to the shredded chicken to keep it saucy. Toast the buns before assembling to prevent sogginess. For super fine shreds, use a hand mixer on low speed. The filling can be made ahead and stored in the fridge for up to 2 days.
