Easy Creamy Burrata & Grilled Peach Summer Salad

A quick and easy summer salad featuring warm grilled peaches, cold creamy burrata, balsamic glaze, fresh basil, and toasted pecans. Perfect for entertaining with minimal effort.

  • 4 medium ripe but firm peaches
  • 8 ounces burrata cheese (2 small balls or 1 large)
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons balsamic glaze
  • 1/4 cup fresh basil leaves, loosely packed
  • 1/4 cup toasted pecans, roughly chopped
  • Flaky sea salt (e.g., Maldon)
  • Freshly cracked black pepper
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat. It should be hot enough that water droplets sizzle and evaporate immediately.
  2. Wash and halve the peaches. Cut each peach in half around the equator (not through the stem), twist gently to separate, and remove the pit.
  3. In a small bowl, combine 2 tablespoons olive oil with a pinch of salt. Gently toss the peach halves until lightly coated.
  4. Place the peach halves cut-side down on the hot grill. Cook undisturbed for 3-4 minutes until grill marks form. Flip and cook for another 2 minutes on the skin side. Peaches should be slightly softened but still hold their shape.
  5. Transfer grilled peaches to a cutting board and let rest for 2-3 minutes to allow juices to redistribute.
  6. Place burrata on a serving platter. Using a sharp knife, gently cut a small slit in the top of each burrata ball. Drizzle with remaining 1 tablespoon olive oil and a pinch of flaky salt.
  7. Slice grilled peach halves into wedges or leave halved. Arrange around and on top of the burrata. Tear basil leaves with hands and scatter over everything. Sprinkle toasted pecans on top.
  8. Drizzle balsamic glaze over the entire salad. Add a final pinch of flaky salt and a generous crack of black pepper. If desired, drizzle honey over peaches for extra sweetness.
  9. Serve immediately while peaches are warm and burrata is cold and creamy.

Notes

Let burrata come to room temperature for 15 minutes before serving for extra creaminess. Don’t refrigerate peaches before grilling. For best results, assemble right before serving. If peaches aren’t sweet, brush with honey before grilling.
