Easy Cranberry Brie Bites: Best Thanksgiving Appetizer

These cranberry brie bites are buttery, tangy, sweet, and salty all at once, and they look way more impressive than they have any right to be for how simple they are. They’re the perfect Thanksgiving appetizer that disappears before the turkey even hits the table.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into 24 small cubes (about ½-inch each)
  • ½ cup whole berry cranberry sauce
  • 2 tablespoons chopped fresh rosemary (or 1 teaspoon dried)
  • 1 large egg, beaten with 1 tablespoon water for egg wash
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Lightly grease your mini muffin tin with butter or non-stick spray.
  2. On a lightly floured surface, unfold your thawed puff pastry sheet. Roll it out to about a 12×12-inch square. Cut the pastry into 24 equal squares, about 2 inches each.
  3. Gently press each square into a cup of the mini muffin tin, making sure the corners stick up slightly. If the pastry feels too warm, pop the tin in the fridge for 5 minutes to firm it up.
  4. Place one cube of brie into each pastry cup.
  5. Spoon about ½ teaspoon of cranberry sauce over each brie cube.
  6. Sprinkle a few rosemary leaves over each bite. Lightly brush the exposed pastry edges with the egg wash. Sprinkle a tiny pinch of flaky sea salt over each bite.
  7. Bake for 12-15 minutes, until the pastry is golden brown and puffed, and the brie is melted and bubbly.
  8. Let the bites cool in the pan for 3-5 minutes. Use a small offset spatula or butter knife to gently lift each bite out. Transfer to a serving platter.
  9. Sprinkle with a few more fresh rosemary leaves and a drizzle of honey if desired. Serve warm.

Notes

You can assemble these bites up to 24 hours in advance. Just prepare them in the muffin tin, cover tightly with plastic wrap, and refrigerate. When ready to bake, add an extra 2-3 minutes to the baking time. For freezing, assemble unbaked, freeze until solid, then transfer to a freezer bag. Bake from frozen, adding 3-5 minutes to the baking time.
