This easy copycat Starbucks pumpkin cream cold foam coffee recipe is the one I make on repeat from September through December. It’s better than the drive-through version—not just cheaper, but actually better, with thicker cream and more real pumpkin flavor.

  • 1 ½ cups cold brew coffee (or strongly brewed coffee, chilled)
  • Ice cubes (as needed)
  • ¼ cup heavy cream
  • 2 tablespoons whole milk
  • 1 tablespoon pumpkin puree (100% pure pumpkin, not pumpkin pie filling)
  • 1 tablespoon vanilla syrup (homemade or store-bought)
  • ¼ teaspoon pumpkin pie spice
  • Pinch of salt

Instructions

  1. Prepare your coffee base: Fill a tall glass with ice cubes almost to the top. Pour in 1 ½ cups of cold brew or chilled strong coffee, leaving about an inch of room at the top for the foam. Set aside.
  2. Combine the foam ingredients: In a small bowl or cup, add ¼ cup heavy cream, 2 tablespoons whole milk, 1 tablespoon pumpkin puree, 1 tablespoon vanilla syrup, ¼ teaspoon pumpkin pie spice, and a pinch of salt. Stir gently with a spoon to combine.
  3. Blend the foam: Using a milk frother or small blender, blend the mixture for 30 to 45 seconds until it transforms into a thick, pourable foam that looks like a thick milkshake.
  4. Pour the foam over the coffee: Slowly pour the foam over the back of a spoon onto the top of your iced coffee to help it float rather than sink.
  5. Optional garnish: Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top of the foam for presentation.
  6. Serve immediately: The foam is best within the first few minutes. Don’t stir it—drink it through the foam for the full experience.

Notes

For best results, use cold ingredients straight from the fridge. Don’t over-blend or the foam will become too thick. The pinch of salt is essential—it balances the sweetness and enhances the pumpkin flavor. For a dairy-free version, substitute heavy cream with full-fat coconut cream and use barista-style oat milk. The foam is best enjoyed within 5-10 minutes of making.
