Ingredients

Scale
  • 8 ounces Brie cheese, rind removed and cut into 24 small cubes (about ½-inch each)
  • 2 boxes frozen mini phyllo shells (15 shells each)
  • ½ cup whole berry cranberry sauce
  • ⅓ cup pecans, roughly chopped
  • 2 tablespoons honey
  • Optional: fresh rosemary sprigs or thyme leaves for garnish
  • Optional: flaky sea salt (like Maldon) for finishing
  • Optional: extra chopped pecans for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Arrange the frozen phyllo cups on a baking sheet (do not thaw).
  2. Toast the pecans: Place chopped pecans in a small dry skillet over medium heat. Stir constantly for 3-4 minutes until fragrant and slightly darker. Immediately transfer to a plate to cool. Reserve about 1 tablespoon for garnish.
  3. Prepare the brie: Using a small knife, carefully cut the rind off the brie wheel. Slice the wheel in half horizontally, then cut each half into 12 small cubes (about ½-inch each).
  4. Assemble the bites: Spoon about ½ teaspoon of cranberry sauce into each phyllo cup. Top with a cube of brie, then sprinkle with toasted pecans (reserving some for garnish). Gently press down.
  5. Bake: Place the baking sheet in the preheated oven and bake for 10-12 minutes, until the brie is melted and bubbly and the phyllo edges are golden brown. Check at 10 minutes.
  6. Finish and serve: Remove from oven and let cool on the baking sheet for 2-3 minutes. Drizzle with honey and sprinkle with reserved toasted pecans and fresh thyme leaves if using. Serve warm.

Notes

You can assemble the bites up to 2 hours ahead and refrigerate; add 2-3 minutes to baking time. For a gluten-free version, use gluten-free phyllo shells. For a nut-free option, substitute pecans with sunflower seeds or pumpkin seeds. To freeze, assemble unbaked bites on a baking sheet, freeze until solid, then transfer to a freezer bag for up to 1 month; bake directly from frozen, adding 3-5 minutes to the baking time.
