  • 1215 fresh jalapeños (medium)
  • 8 ounces cream cheese, softened
  • 1216 slices thin-cut bacon
  • ½ cup shredded cheddar cheese
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon onion powder
  • Salt and black pepper to taste
  • Chopped fresh chives or green onions (optional garnish)
  • Ranch dressing or blue cheese dip (optional, for serving)

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if available.
  2. Par-cook the bacon: Place bacon slices on a microwave-safe plate lined with paper towels. Microwave on high for 2-3 minutes until partially cooked but still flexible. Alternatively, cook in a skillet over medium heat for about 2 minutes per side. Let cool slightly, then cut each slice crosswise into 2-3 pieces.
  3. Wearing gloves, slice jalapeños into ½-inch thick rounds. Use a small spoon to remove seeds and white membranes from each round.
  4. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, smoked paprika, onion powder, and a pinch of black pepper. Stir until smooth.
  5. Transfer cream cheese mixture to a piping bag or zip-top bag with the corner snipped off. Pipe filling into each jalapeño round, filling just slightly heaping.
  6. Wrap a piece of par-cooked bacon around each filled jalapeño round, overlapping ends slightly. Place seam-side down on the prepared wire rack or baking sheet.
  7. Bake for 18-22 minutes until bacon is crispy and golden brown and filling is hot and bubbly. If not using a wire rack, flip halfway through.
  8. Let rest on baking sheet for 5 minutes. Transfer to a serving platter, garnish with chives if desired, and serve warm.

Notes

Par-cook the bacon for best crispiness. Wear gloves when handling jalapeños. Use a wire rack for even crisping. Can be assembled up to 24 hours in advance and refrigerated; add 5 minutes to baking time if starting cold. Reheat in oven or air fryer for best texture.
