  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 cup sharp cheddar cheese, finely shredded
  • 1/2 cup cooked bacon, crumbled (about 68 slices)
  • 3 tablespoons fresh chives, finely chopped
  • 4 large (10-inch) flour tortillas

Instructions

  1. Cook the bacon until very crispy. Let cool completely, then crumble into small pieces.
  2. Soften cream cheese by letting it sit at room temperature for 30 minutes. Cut into cubes to speed up softening.
  3. In a large mixing bowl, combine softened cream cheese and sour cream. Beat with a hand mixer on medium speed until smooth and fluffy, about 1 minute.
  4. Add dry ranch seasoning and beat until fully incorporated, about 30 seconds.
  5. Fold in shredded cheddar cheese, crumbled bacon, and chopped chives until evenly distributed.
  6. Lay a tortilla flat on a cutting board. Spread about 1/2 cup of filling evenly across the entire surface, leaving a 1/2-inch border around the edges.
  7. Starting from one edge, roll the tortilla up tightly but gently. Place seam-side down.
  8. Wrap each rolled tortilla tightly in plastic wrap. Refrigerate for at least 2 hours, or overnight.
  9. When ready to serve, unwrap rolls and place on a cutting board. Trim off the very ends (about 1/2 inch from each side).
  10. Slice each roll into 1-inch thick pinwheels (about 8-9 per tortilla).
  11. Arrange on a serving platter and garnish with extra chopped chives or paprika if desired. Serve cold or at room temperature.
