  • 6 bone-in, skin-on chicken thighs
  • 1/3 cup (80 ml) honey
  • 1/3 cup (80 ml) soy sauce (low-sodium preferred)
  • 4 cloves garlic, minced
  • 2 cups (370 g) long grain white rice

Instructions

  1. Pat 6 bone-in, skin-on chicken thighs dry with paper towels.
  2. In a small bowl, combine 1/3 cup honey, 1/3 cup soy sauce, and 4 cloves minced garlic. Stir until well blended.
  3. Place the chicken thighs skin-side down at the bottom of the slow cooker. Pour the honey garlic sauce evenly over the chicken, coating each piece.
  4. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours until chicken is tender and easily pulls away from the bone.
  5. About 30 minutes before the chicken finishes, cook 2 cups of long grain rice according to package instructions. Fluff with a fork once done.
  6. Remove chicken thighs and transfer to a serving platter. Pour remaining sauce into a small saucepan and simmer over medium heat for 5-7 minutes until slightly thickened, stirring frequently.
  7. Spoon the thickened honey garlic sauce over the chicken thighs and serve hot over the freshly cooked rice.

Notes

Patting the chicken dry helps the sauce stick better and prevents sogginess. Cooking on low heat allows flavors to meld without bitterness. Simmer the sauce after cooking to thicken and intensify flavor. For crispier skin, broil chicken thighs for 3-4 minutes after slow cooking. If sauce is too thin, add a cornstarch slurry to thicken.
