A simple, delicious honey mustard chicken bento made with just five ingredients. Perfect for meal prep, this recipe delivers sweet, tangy, and sticky chicken with caramelized edges in about 30 minutes.

  • 1/3 cup honey
  • 3 tablespoons Dijon mustard
  • 2 tablespoons whole grain mustard
  • Salt and black pepper to taste
  • Optional: pinch of garlic powder or smoked paprika, splash of apple cider vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Let chicken thighs sit at room temperature for about 10 minutes.
  2. Trim excess fat from chicken thighs and pat dry with paper towels.
  3. In a mixing bowl, whisk together 1/3 cup honey, 3 tablespoons Dijon mustard, and 2 tablespoons whole grain mustard until smooth. Season with salt and pepper.
  4. Place chicken thighs in a 9×13 inch baking dish in a single layer. Pour honey mustard sauce over chicken, turning to coat thoroughly.
  5. Bake uncovered for 25-30 minutes, basting with pan juices at the 15-minute mark. Chicken is done when internal temperature reaches 165°F (74°C).
  6. Let chicken rest for 5 minutes.
  7. Slice chicken against the grain into strips or leave whole. Arrange in bento box with sides and drizzle remaining pan sauce on top.

Notes

For best results, don’t overcrowd the pan. Baste mid-cook for moisture and glaze. Chicken tastes even better on day two as flavors meld. For extra sauce, double the recipe and reserve half for drizzling. If sauce seems thin after baking, simmer on stovetop to thicken.
