  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained (or 1.5 cups frozen corn)
  • 1 can (14.5 ounces) diced tomatoes with green chiles (like Rotel)
  • 1 packet (1 ounce) taco seasoning (or 3 tablespoons homemade)
  • 2 cups beef broth (or chicken broth)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it up with a wooden spoon, until no longer pink. Drain excess fat, leaving about a tablespoon for flavor.
  2. While the beef browns, drain and rinse the black beans and corn under cold water for about 30 seconds.
  3. Transfer the browned beef to a 4-6 quart crockpot. Add the drained black beans, drained corn, undrained diced tomatoes with green chiles, taco seasoning, and beef broth. Stir until well combined.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. About 30 minutes before serving, taste and adjust seasoning as needed (e.g., salt, cumin, lime juice, hot sauce).
  6. Ladle into bowls and serve with desired garnishes such as crushed tortilla chips, shredded cheese, sour cream, diced avocado, and fresh cilantro.

Notes

For best flavor, brown the beef before adding to the crockpot. Avoid lifting the lid during cooking to maintain heat. Leftovers keep in the refrigerator for up to 5 days and freeze well for up to 3 months.
