Easy 15-Minute Mug Lasagna: Best Single-Serve Dinner

A quick and easy single-serve lasagna made in a mug in under 15 minutes. Perfect for a lazy weeknight dinner when you want comfort food without the fuss.

  • 23 dried lasagna noodles, broken into 1-inch pieces
  • ½ cup marinara sauce
  • ¼ cup whole-milk ricotta cheese
  • ⅓ cup shredded whole-milk low-moisture mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 2 tablespoons water
  • Salt and black pepper to taste
  • Optional: cooked ground beef, Italian sausage, or sautéed mushrooms; dried oregano or basil

Instructions

  1. Break 2-3 dry lasagna noodles into 1-inch pieces.
  2. In a small bowl, combine ¼ cup ricotta cheese with a pinch of salt and black pepper. Optionally, stir in 1 teaspoon of beaten egg for a firmer layer.
  3. Spoon 2 tablespoons of marinara sauce into the bottom of a microwave-safe mug (12-16 oz capacity).
  4. Place a single layer of broken noodle pieces on top of the sauce.
  5. Spoon about half of the seasoned ricotta (about 2 tablespoons) over the noodles.
  6. Add another 2 tablespoons of marinara and sprinkle about 2 tablespoons of shredded mozzarella on top.
  7. Repeat layers: add remaining noodles, remaining ricotta, and more sauce.
  8. Top with remaining shredded mozzarella and a sprinkle of Parmesan. Pour 2 tablespoons of water gently over the top.
  9. Microwave on high for 4-5 minutes (adjust based on microwave wattage) until cheese is bubbly and noodles are tender.
  10. Let the mug rest in the microwave for 1-2 minutes, then carefully remove and let cool for another minute before serving.

Notes

Do not skip the water; it creates steam to cook the noodles. Let the lasagna rest after microwaving to allow noodles to finish absorbing moisture. Use a wide mug for even layering and cooking. Adjust microwave time based on wattage.
