Easy 15-Minute Cranberry Brie Bites Recipe

These golden, flaky puff pastry bites are filled with creamy brie and sweet-tart cranberry sauce, making them a perfect quick appetizer for parties or a fun family snack.

  • 1 sheet (about 250g) refrigerated puff pastry, thawed
  • 4 oz (113g) brie cheese, cold
  • 1/3 cup (80ml) whole berry cranberry sauce
  • 1 large egg, beaten
  • 1 tablespoon fresh rosemary or thyme, finely chopped (optional)
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. On a lightly floured surface, gently unfold the thawed puff pastry sheet. Using a sharp knife or pizza cutter, cut it into 9 equal squares (about 3 inches each).
  3. Slice the cold brie into 9 small cubes, about 1/2 inch each.
  4. Place a brie cube in the center of each pastry square. Top each with about 1 teaspoon of cranberry sauce.
  5. Gently lift the four corners of the pastry square and pinch them together at the top, creating a little ‘purse’. Make sure the seams are pinched shut.
  6. In a small bowl, beat the egg with a teaspoon of water. Using a pastry brush, lightly coat the top and sides of each pastry purse. Sprinkle with flaky sea salt and fresh herbs if using.
  7. Place the baking sheet on the middle rack and bake for 12-15 minutes, or until the pastry is puffed and deeply golden brown. Let them cool on the baking sheet for 2-3 minutes before serving.

Notes

Keep the brie cold for easier cutting and to prevent leaking. Don’t overfill with cranberry sauce—1 teaspoon per bite is perfect. Pinch the pastry seams well to avoid cheese leakage. For a gluten-free version, use gluten-free puff pastry. For a dairy-free version, use a plant-based brie alternative.
