A festive and easy Halloween treat combining crunchy air-popped popcorn with a chewy, sweet caramel made from melted candy corn, butter, and sugar.

  • 12-ounce bag (approx. 3 cups) candy corn
  • 4 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Vegetable oil (for greasing hands)

Instructions

  1. Place fresh, popped popcorn in a large mixing bowl and set aside.
  2. In a large heavy-bottomed saucepan, combine candy corn, butter, sugar, corn syrup, and water.
  3. Cook over medium-low heat, stirring constantly with a silicone spatula, until the candy corn melts into a thick, gooey liquid (about 10-12 minutes).
  4. Clip on a candy thermometer and continue cooking until the mixture reaches 235°F to 240°F (soft-ball stage).
  5. Remove from heat and stir in vanilla extract and salt.
  6. Quickly pour the hot caramel mixture over the popcorn and fold gently to coat evenly.
  7. Grease hands with vegetable oil, scoop portions (1/4 to 1/3 cup), and gently press into balls.
  8. Place balls on a parchment-lined baking sheet and cool at room temperature for at least 30 minutes.

Notes

Avoid refrigerating as it makes the caramel too hard. Store in an airtight container at room temperature for up to 5 days. If the mixture hardens before shaping, gently reheat in 10-second microwave intervals. Ensure popcorn is fresh and crunchy to prevent sogginess.
